Paella

Oh! The red bell pepper, onion, garlic and hot italian chicken sausage cook until tender. Rice, then, has a turn in the hot pan until slightly toasted. I throw some wine onto the rice and cook it until evaporated. Suddenly, the vegetables and sausage are back in with the rice. Chicken broth and saffron come in to help everything get very mixed together. Soon pieces of browned chicken are added and, finally, prawns, clams and mussels will sit atop it all and steam until ready. Some late arriving parsley will add flecks of green to the finish. It’s paella and it’s really good.
